Cheese souffle

  • 6 tablespoon butter
  • 6 tablespoon flour
  • salt and pepper
  • 2 cups milk
  • 5 eggs 2 cups cheese
  • 3 tablespoons chives

Make a blonde roux by melting butter and then whisking in the flour. Add the milk all at the same time and whisk and once its thick, let it cool in a bowl.
